The MBOLD Protein Catalyst is fueling pre-competitive research to explore new ways to drive greater market success for oats and dry beans as protein and associated ingredients. In this panel, MBOLD corporate partners and the Sask Food Industry Development Centre will share our recent research and explore how advances in processing technology, upcycling, and end-use applications can unlock new market opportunities for these botanicals from high-protein foods and clean-label formulations to fermentation feedstocks and novel biomaterials. We will also share opportunities to participate in the next phase of the MBOLD Coalition’s work.
